Ingredients

🫒 2 tbsp extra-virgin olive oil
🧅 1 medium white onion, diced
🍗 1 lb ground turkey
🫘 1 (15-16 oz) can refried beans
💧 1/4 - 1/2 cup water
🧀 1-1.5 cups shredded cheese, Monterey Jack or mild cheddar
🌮 Gluten-free tortillas, 5-6 count
🥫 1 (10-12 oz) can store-bought enchilada sauce
🍃 Small bunch of cilantro, chopped
🧄 Garlic cloves, minced, quantity to taste
🌶️ Taco seasoning, to taste


Instructions

1- Preheat the Oven:

  • Preheat your oven to 350°F (175°C).

2- Prepare the Turkey Mixture:

  • In a stainless steel frying pan, drizzle some olive oil and heat over medium flame.
  • Add the diced onion and ground turkey to the pan.
  • Use a meat chopper/masher to break up the turkey. Cook until browned.

3- Add Additional Ingredients:

  • Stir in the refried beans, carefully adding water and minced garlic.
  • Add taco seasoning to taste, stirring well with a wooden spoon until the mixture is thoroughly combined and heated.

4- Shred the Cheese:

  • Using a box grater, shred your choice of cheese.

  • Lay each gluten-free tortilla flat on a cutting board.
  • Spoon a generous portion of the turkey-bean mixture onto the center of each tortilla.
  • Sprinkle the grated cheese over the filling.
