
When I make up my mind to get serious about making changes for a healthier lifestyle, I pretty much stick to it. My husband is underweight for his height, and I am overweight for mine. I decided that a Keto-style way of eating would be my best bet for losing some weight.
I do cook carbs for hubby, and will have a small portion with my meal at dinner. Otherwise, I really stick to eating well. On this night, I made chicken legs in the air fryer, fried some cabbage with olive oil and spices, and had a small amount of mashed potatoes.

Another meal that we enjoy is soup. This one I made with shredded turkey left over from Thanksgiving, along with spinach and frozen vegetables from the garden this year. Having Turkey stock in the pantry shelves gave the soup an extra Turkey flavor, perfect for a cold winter's day. We always finish our dinner by 6:00 p.m., and we do not have anything to eat until lunch the following day.

Normally, I will wait until 1:00-1:30 p.m. before breaking my fast. This usually gives me an 18+ #intermittent fasting window. Adding high-fat foods like sardines and avocado is what I have every other day for lunch; this helps my body to burn more fat and takes me out of the sugar-burning phase that carbohydrates like to store.

I often eat a large salad with Olive Oil and Red Wine Vinegar, and sometimes have a can of sardines with Jalapeno mustard sauce. Believe it or not, but it helps me to eat them. I haven't tried frying sardines yet, but have heard others say they are good that way to change things up a bit.

My husband asked if I would make some tacos for dinner for something different. I cut up all the ingredients and fried some beef for the filling. I always heat a soft tortilla in a frying pan and wrap the hard taco shell in it before filling the shell. It makes it so much easier to eat them that way, well, in my opinion.

I imagine that between the tortilla and corn taco shell, it put me way over the top for carbs that night. It's a good thing I ate the sardines and avocado earlier, as one taco filled me up.

Since cabbage is one vegetable that is good for a keto diet, I cut up one head and made a small batch of Sauerkraut.

Look at the bubbles, I would have to say it is fermenting perfectly. Now, I can add some to my salads to add some good bacteria for my gut. That's a win-win for me!
These were a few foods that I ate this past week, and I will continue to share my journey with you. So far, since starting at the end of October, I have dropped 22 lbs. I know it doesn't seem like much, but it has been slow and steady, which I think is better than too much too fast.
