In my opinion, every sponge cake has different characteristics in terms of taste and texture. This recipe is no exception. The grated coconut base enhances the aroma of this cake. Coconut always gives a savory and delicious aroma to dishes, especially baked cakes. It makes the cake seem like a luxurious treat. Making this cake was my first attempt. Usually, this cake is made into cupcakes, but since I ran out of cupcake molds, I decided to add it to a large mold so I could make it all at once.

Mix the eggs, sugar, and baking powder in a bowl, then add a little vanilla powder or liquid vanilla.
Then mix on high speed until white and fluffy.
Then sift the dry ingredients into the egg mixture: all-purpose flour, cornstarch, baking powder, and salt.
Mix briefly until well combined, then add the grated coconut and stir until evenly distributed.
Finally, add cooking oil or melted margarine to the batter while stirring.
Grease the baking pan with margarine, then pour the batter into the pan and sprinkle sukade on top to decorate the cake.

The result was beautiful, the cake rose perfectly and its aroma filled my entire house. How could I not? I can't lie, the aroma and taste of coconut blended perfectly in the cake. This was something extraordinary in my opinion, and I had never done it before.
It's very savory, and the sweetness is just right, not excessive. I had no idea that this cake was made from coconut. My husband said that the coconut wasn't visible, but the aroma was noticeable. He liked the light texture and hot tea was his staple at that time. He said that this was indeed the most delicious accompaniment to tea. Of course, this will be my favorite coconut cake.
