Hello everyone! Today I'm sharing another recipe. This dish could be considered a healthy meal because most of the ingredients are vegetables. This is a corn and cucumber dish, one of my favorites. Before, I usually didn't include corn; I typically used cucumber as the main ingredient. But today, I tried adding corn and it tasted surprisingly good! So today, I want to share the ingredients and method with you all. Let's see what we need:
Ingredients
- One large cucumber
- One ear of corn
- Half a shallot (or two to three small onions)
- 3-4 celery leaves
- A lemon
- 2-3 fresh or dried chilies
- 1 clove of garlic
- 1 teaspoon fish sauce
- 1 tablespoon fermented fish sauce
Method
- Wash and prepare all the vegetables. Then chop the cucumber according to your preference; some people like long strips, but I prefer shorter pieces because they blend better when added later. Set aside for a moment.
- Next, finely chop the garlic and vegetables, then add the cucumber and lemon. - Add lemon zest for an aromatic flavor, then mash everything together to release the aroma.
- Season with fish sauce and mix everything together. Taste and adjust seasoning as needed if you prefer more sourness, spiciness, or saltiness. You can add sugar if you like, but I personally prefer the sweetness from the tomatoes and corn.
- Once seasoned to your liking, add the chopped cucumber, followed by half of the corn (save the other half for a side dish). Then mix everything together.
- Garnish with chopped shallots and celery leaves. Taste and if the flavor is satisfactory, serve. Today I added a boiled egg for extra protein and some boiled vegetables like broccoli and carrots.
Adjust the spiciness to your liking; you can add any other vegetables you have on hand โ they go very well together.
