Hope this finds you well. So, the other night we had a company at home, we decided to order in pizza, right. Normally the pizza place had this option where we can choose between brownies, cookie pizza, and cinnamon rolls for our dessert. Those were gone. They have apple cinnamon pizza instead, which is meh. Anyways. I was so hoping for BROWNIES but no more. Soooooo, I bake myself brownies the following day ๐
As I was thinking that regular brownies is just too common, I made mine with Pandan swirl, bringing in South East Asian goodness to the chocolate brownies ๐

1/2 c melted butter, lukewarm 1/4 c vegetable oil 1 c sugar 1/2 c brown sugar 2 eggs A cap of vanilla essence 1 c flour 1/2 c cocoa powder A pinch of salt 1/2 tsp BP
Pandan Swirl
3 tbsp melted butter 1/4 c sweetened condensed milk 1 yolk 1/2 c flour 1/2 - 1 tsp pandan paste 2 tbsp milk, only if needed (if batter too thick)
For the chocolate batter, whisk wet ingredients together until completely combined, then add in dry ingredients, but mix it until just combined.


Spread batter onto square pan, I use 8x8 inch pan
Then make the Pandan swirl, by mixing all the ingredients.
Spoon dollops of Pandan swirl on chocolate batter, with a skewer, make swirl but not too much that both batter will be combined too well. We want a nice swirl ๐


Bake brownies on preheated 350 F for 25-28 mins depending how fudgey you want your brownies to be. I noticed with with big oven, around 25-28, but for my counter top oven, 30 mins is good fudgey.
Let cool before slicing
